Delicious and moist apple cinnamon cake perfect for any occasion.
Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup white granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1 cup apple juice (can use 1 cup water)
- 1 tablespoon apple cider vinegar
- 5 tablespoons olive oil (can use vegetable or Canola)
- 1 1/2 teaspoons vanilla extract
- 1 cup peeled and shredded or chopped apples (use your preferred type)
- 1/2 cup chopped walnuts (can use pecans)
Instructions
- Whisk together flour, sugar, baking soda, salt, cinnamon and nutmeg in a bowl.
- Add apple juice, apple cider vinegar, olive oil and vanilla extract. Stir with a spoon.
- Stir in apples and nuts.
- Spray a 8×8 or 9×9 baking dish with cooking spray and add the batter.
- Bake in a preheated 350 degree oven for 40 to 45 minutes until center tests done.
- Let cool for 10 to 15 minutes.
- Sprinkle powdered sugar on top or can frost with your favorite icing.
Notes
- Makes about 9 pieces of cake depending on how you slice it.
- Serving size is set at 4, since people will probably have 2 pieces.
