  • 2 salmon fillets
  • 1/2 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups potatoes, peeled and cubed
  • 2 tablespoons butter (for mashed potatoes)
  • 1/4 cup milk
  • 1/2 lb green beans, trimmed

Instructions

  1. Start with the mashed potatoes. Boil the cubed potatoes in salted water until they’re fork-tender. Drain them well, then mash with butter and milk until smooth and creamy. Keep them warm while you prepare the rest.
  2. Next, bring a pot of water to a boil and cook the green beans for just a few minutes until they’re tender but still bright and crisp. Drain and set aside.
  3. Season the salmon fillets and shrimp generously with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium heat. Place the salmon in the skillet and cook until it develops a golden crust and flakes easily. Remove and set aside.
  4. In the same skillet, add the shrimp and cook for a couple of minutes on each side until pink and opaque. Remove and set aside with the salmon.
  5. Now comes the heart of the dish—the garlic cream sauce. Melt butter in the skillet, then add the minced garlic and cook until fragrant. Pour in the heavy cream and let it simmer gently. Stir in the Parmesan cheese until the sauce becomes smooth and velvety.
  6. Return the salmon and shrimp to the skillet, spooning the sauce over the top so everything is coated in that rich, garlicky goodness.
  7. To serve, plate a generous scoop of mashed potatoes, add the green beans on the side, and top with the Cajun shrimp and salmon. Spoon extra sauce over everything for the perfect finishing touch.
