Description

Delicious spinach and cheese quiche that is perfect for brunch or a light dinner.

Ingredients

Scale
  • 2 cups fresh spinach, chopped
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for sautéing spinach)
  • Optional: herbs (such as parsley or dill) for additional flavor

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 3-4 minutes until wilted. Remove from heat and let cool.
  3. In a large mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, and milk until smooth.
  4. Add garlic powder, onion powder, salt, and black pepper to the egg mixture. Stir well to combine.
  5. Fold the sautéed spinach into the egg and cheese mixture until evenly distributed.
  6. Lightly grease a 9-inch pie dish or quiche pan with cooking spray or olive oil.
  7. Transfer the quiche mixture into the prepared dish, spreading it evenly.
  8. Place in the preheated oven and bake for 40-45 minutes or until the quiche is firm and the top is slightly golden.
  9. Once done, remove the quiche from the oven and let it cool for about 10-15 minutes before slicing.
  10. Cut into wedges and serve warm, or refrigerate for later use.
