- 2 boneless skinless chicken breasts, cut into bite sized pieces
- 3 cups broccoli florets
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups cooked rice
- 1 tablespoon chopped fresh parsley
Instructions
- Cook the rice according to package directions and keep it warm for serving.
- Season the chicken pieces with salt, black pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium high heat.
- Add the chicken and cook for 5 to 7 minutes, stirring occasionally, until golden and fully cooked. Transfer to a plate.
- Add the broccoli to the same skillet and cook for 3 to 4 minutes until bright green and just tender. Remove and set aside with the chicken.
- Lower the heat to medium and melt the butter in the skillet.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine.
- Simmer for 2 to 3 minutes, then stir in the Parmesan cheese until the sauce is smooth.
- Return the chicken and broccoli to the skillet and toss to coat in the creamy garlic sauce.
- Let everything simmer together for 1 to 2 minutes until heated through.
- Spoon the cooked rice into bowls, top with the creamy garlic chicken and broccoli, and finish with chopped parsley.
