Description

A vibrant and fresh parsley dressing perfect for salads and veggies.


Ingredients

Scale
  • 1 bunch fresh flat-leaf parsley (tough stems removed)
  • 12 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • zest of 1 lemon
  • Salt & pepper (to taste)
  • 1/3 cup olive oil (+ more if needed)

Instructions

  1. Chop the parsley to your desired texture and add it to a small bowl.
  2. Stir in the garlic, lemon juice, and lemon zest, and be generous with the salt and pepper.
  3. Pour the olive oil in and give it a stir. Add more oil if desired.
  4. Taste and adjust as needed.
  5. Enjoy right away or let it sit in the fridge for a few hours for the flavors to meld more (I like to let it warm up a bit before serving, though).
