A hearty dish made with beef chuck roast, onions, and a creamy paprika sauce.

- 2 lbs beef chuck roast, cut into chunks
- 2 medium sweet onions, chopped
- 4 cloves garlic, minced
- 1 cup bell peppers (red and green), diced
- 8 oz cremini mushrooms, sliced
- 4 cups beef broth
- 1 cup sour cream
- 2 tbsp smoked paprika
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium-high heat. Sear beef chunks until browned on all sides (about 5 minutes). Remove from pot.
- In the same pot, sauté onions and garlic in the beef drippings until soft (about 4 minutes).
- Add bell peppers and mushrooms; cook until slightly softened (about 3 minutes).
- Return beef to the pot; stir in broth, paprika, mustard, salt, and pepper. Simmer gently for 30 minutes.
- Reduce heat; stir in sour cream until warmed through—do not boil.
- Serve over egg noodles or rice and garnish with fresh parsley if desired.
Notes
- For added flavor, consider marinating the beef overnight.
