Description

Deliciously roasted carrots with garlic and honey, perfect as a side dish.


Ingredients

Scale
  • 2 pounds carrots
  • 2 tablespoons olive oil
  • 34 garlic cloves (minced)
  • 2 1/2 tablespoons honey
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon fresh ground pepper (or to taste)
  • to taste Chopped fresh parsley (to garnish)

Instructions

  1. Preheat the oven to 400F.
  2. Peel and slice the 2 pounds carrots diagonally into about 2-inch pieces.
  3. Place the carrots in a large bowl. Add 2 tablespoons olive oil, 3-4 garlic cloves, 2 1/2 tablespoons honey, 1/2 teaspoon kosher salt, and 1/4 teaspoon fresh ground pepper. Mix well until all pieces are evenly coated.
  4. In a large non-stick baking pan arrange the coated carrots in a single layer.
  5. Place into the preheated oven and bake for about 15-20 minutes, or until caramelized and tender.
  6. Transfer to a serving bowl and garnish with chopped fresh parsley.

Notes

  • For extra flavor, try adding your favorite herbs.
  • This recipe is easily adjustable for larger servings.
