Ingredients

- 1 cup butter (unsalted or salted)
- 1/2 cup granulated sugar (plus more for sprinkling)
- 1 egg
- 2 teaspoons vanilla bean paste (or vanilla extract)
- 2 cups all purpose flour
- 1/4 teaspoon fine sea salt
Instructions
- Preheat oven to 350° and line baking sheets with silicone baking mats.
- Cream butter and sugar together until light and fluffy.
- Add the egg and vanilla, mixing until fully combined.
- Slowly add in flour and salt until a smooth dough forms.
- Fit a cookie press with your desired disc and fill with dough.
- Press cookies directly onto the baking sheet, leaving a little space between each cookie.
- Sprinkle with sugar if desired.
- Bake just until the cookies are set and lightly browned on the bottoms, about 9-10 minutes.
- Remove from the oven and allow to cool briefly on the pan before transferring to a wire rack to cool completely.
Notes
- For best results, ensure all ingredients are at room temperature.
- You can substitute the vanilla bean paste with vanilla extract, but the flavor will differ slightly.
