BBQ Chicken Thighs with Ranch Seasoning

Description

A delicious recipe for BBQ chicken thighs seasoned with ranch flavor and baked to perfection.


Ingredients

  • 1 packet hidden valley ranch seasoning mix
  • 1 tsp onion powder
  • 1 tsp parsley flakes
  • 1 tsp black pepper
  • ½ tsp salt
  • 1 red onion (sliced into rounds)
  • 5 tbsp olive oil (divided)
  • 6 bone-in skin-on chicken thighs
  • ½ cup bbq sauce
  • 2 tbsp brown sugar
  • 1 ½ tbsp apple cider vinegar

Instructions

  1. In a small bowl, combine ranch seasoning, onion powder, parsley flakes, black pepper, and salt. Set it aside.
  2. In a large baking dish, add the sliced red onion and scatter them around. Take a tsp of the set aside seasoning mixture and sprinkle it evenly over the onions. Drizzle a tbsp of olive oil over the onions and toss everything together.
  3. Place the chicken thighs on top of the onions and shake the remaining seasoning mixture evenly over top of the chicken and pat it in.
  4. Drizzle about 4 tbsp of olive oil evenly over the chicken thighs.
  5. Bake in the oven at 400°F for 1 hour and 15 minutes.
  6. In a measuring cup or bowl, add bbq sauce, brown sugar, and apple cider vinegar, and whisk together until combined. Set it aside.
  7. After 40 minutes of cooking, take the baking dish out of the oven and use a silicone brush to brush the bbq sauce mixture over the chicken thighs.
  8. Return to the oven for the remaining 35 minutes to finish cooking.
  9. Serve with mashed potatoes and roasted corn. Enjoy!
