Description
A delicious recipe for BBQ chicken thighs seasoned with ranch flavor and baked to perfection.
Ingredients

- 1 packet hidden valley ranch seasoning mix
- 1 tsp onion powder
- 1 tsp parsley flakes
- 1 tsp black pepper
- ½ tsp salt
- 1 red onion (sliced into rounds)
- 5 tbsp olive oil (divided)
- 6 bone-in skin-on chicken thighs
- ½ cup bbq sauce
- 2 tbsp brown sugar
- 1 ½ tbsp apple cider vinegar
Instructions
- In a small bowl, combine ranch seasoning, onion powder, parsley flakes, black pepper, and salt. Set it aside.
- In a large baking dish, add the sliced red onion and scatter them around. Take a tsp of the set aside seasoning mixture and sprinkle it evenly over the onions. Drizzle a tbsp of olive oil over the onions and toss everything together.
- Place the chicken thighs on top of the onions and shake the remaining seasoning mixture evenly over top of the chicken and pat it in.
- Drizzle about 4 tbsp of olive oil evenly over the chicken thighs.
- Bake in the oven at 400°F for 1 hour and 15 minutes.
- In a measuring cup or bowl, add bbq sauce, brown sugar, and apple cider vinegar, and whisk together until combined. Set it aside.
- After 40 minutes of cooking, take the baking dish out of the oven and use a silicone brush to brush the bbq sauce mixture over the chicken thighs.
- Return to the oven for the remaining 35 minutes to finish cooking.
- Serve with mashed potatoes and roasted corn. Enjoy!
