Key Ingredients for Lemon Berry Trifle

Creating a delightful lemon berry trifle involves sourcing a few key ingredients that bring this cheerful dessert to life. Let’s dive into what you’ll need!

  • Lemon Curd: Opt for homemade lemon curd if you can; it’s vibrant, tangy, and sets the perfect foundation for your trifle. However, store-bought can work in a pinch, adding that zesty kick with considerable ease.

  • Fresh Berries: A mix of strawberries, blueberries, and raspberries makes each layer of your lemon berry trifle pop with color and flavor. Seasonal, ripe berries tend to be sweeter, enhancing the overall taste of the dessert.

  • Pound Cake: I recommend using light and airy pound cake, as it easily absorbs the juices from the lemon curd and berries. You can slice it yourself or purchase pre-sliced cake, which saves time!

  • Whipped Cream: Freshly whipped cream adds a lusciousness that balances the tartness of the lemon and the sweetness of the berries. For best results, whip your cream just before assembling the trifle to maintain that delightful fluffiness.

  • Mint Leaves: For a refreshing touch, a few sprigs of mint not only add a dash of color but also enhance the aroma and flavor, making your lemon berry trifle even more inviting.

Now you’re ready to elevate your dessert game!

Tips for Making the Perfect Lemon Berry Trifle

Creating a delightful lemon berry trifle can feel like an art, combining layers of flavor and texture into a stunning dessert. As someone who has experimented with this recipe during countless gatherings, I’ve learned a few simple tricks to elevate your trifle game.

Choose the Right Berries

For the best outcomes, opt for fresh, seasonal berries. Strawberries, blueberries, and raspberries not only add vibrant color but also provide a burst of flavor. Wash them gently and slice them as needed to highlight their natural beauty and juiciness.

Perfecting the Lemon Curd

Make sure your lemon curd is smooth and zesty. Strain it after cooking to eliminate any lumps. This will ensure that each spoonful is bursting with that beautiful lemony goodness we all crave in a lemon berry trifle.

Layer Wisely

Layering is key. Start with a base layer of crumbled cake, followed by a generous helping of lemon curd, then fruits. Repeat this sequence, ensuring the top layer showcases your berries and a dollop of whipped cream—this creates an eye-catching finish.

Chill Before Serving

Letting your trifle chill in the fridge for at least a few hours allows the flavors to meld beautifully. Plus, it makes for a refreshing, cool dessert that is perfect for hot summer days.

Serve with a Smile

Finally, presentation matters! Use clear glass bowls to show off your stunning layers and serve with enthusiasm. After all, sharing delicious food is all about the joy it brings!

Description

A refreshing lemon berry trifle made with layers of lemon pound cake, creamy lemon cheesecake mixture, and fresh mixed berries.

Ingredients

Scale
  • 1 9×5-inch loaf lemon pound cake, baked and cooled
  • 2 cups (480ml) heavy cream
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 8 ounces (226g) full-fat brick cream cheese, softened to room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1 cup lemon curd (homemade or store-bought), at room temperature
  • 56 cups (about 750g) fresh mixed berries (I use blueberries and raspberries)
  • optional: additional berries and lemon slices for garnish

Instructions

  1. Slice the lemon pound cake into 9 1-inch slices. Cut into bite-sized cubes. Set aside.
  2. In a large bowl using a hand mixer or a stand mixer fitted with a whisk attachment, beat the heavy cream, granulated sugar, and vanilla extract together on high speed into stiff peaks, about 3 minutes. Cover and store in the refrigerator until ready to use in step 3.
  3. In a large bowl using a hand mixer or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese on medium-high speed until creamy. Add the vanilla extract and lemon curd and beat on medium-high speed until combined. Lastly, beat in half of whipped cream (about 2 cups) that you prepared in step 2.
  4. This trifle has 3 layers of pound cake, 3 layers of berries, and 2 layers of the lemon cheesecake mixture. Begin with a base of lemon pound cake cubes. Top with an even layer of fresh berries, then half of the lemon cheesecake mixture. Repeat. Finish with final layer of lemon pound cake cubes followed by a final layer of berries. Spread or pipe remaining whipped cream on top of the trifle. I used Wilton 1M piping tip to pipe the whipped cream on top.
  5. Refrigerate for at least 2 hours and up to 6 hours (see make ahead tip if you wish to store longer). You can refrigerate uncovered for 2-4 hours, but I recommend loosely covering if storing longer than that. The time in the refrigerator gives the flavors a chance to settle and allows the pound cake to soak up some of the lemon cheesecake mixture.
  6. Garnish with extra berries and/or lemon slices and serve cold. Cover and store any leftovers in the refrigerator for up to 2-3 days.
