Key Ingredients for Slow Cooker Barbecue Chicken

Creating the perfect slow cooker barbecue chicken starts with choosing the right ingredients that elevate flavors and ensure a tender result. With just a few key components, you’ll be able to whip up a meal that feels homemade and hearty.

  • Chicken: I recommend using bone-in, skin-on chicken thighs for the juiciest flavor. They stay moist during cooking and become incredibly tender. If you’re after a healthier option, boneless, skinless chicken breasts can work, too—just be mindful that they may require less cooking time.

  • Barbecue Sauce: Opt for your favorite store-bought barbecue sauce, or make your own for a personalized kick. A sauce with rich, smoky flavors will enhance the dish. For a unique twist, consider adding some additional spices or a splash of apple cider vinegar for depth.

  • Onions and Garlic: These aromatics are essential. Chopped onions provide sweetness and depth, while minced garlic adds a robust flavor.

  • Chicken Broth: A splash of chicken broth helps to keep the chicken moist and infuses it with savory goodness.

  • Spices: A thoughtful blend of paprika, paprika, salt, and pepper can elevate the flavors to mouthwatering heights.

These key ingredients come together in the slow cooker to provide a delicious and effortless meal, perfect for a busy weeknight or a cozy gathering with friends.

Variations on Slow Cooker Barbecue Chicken

There’s something undeniably comforting about slow cooker barbecue chicken. Whether you’re sharing a meal with friends or enjoying a quiet dinner at the end of a long day, this dish is sure to bring everyone together. However, switching things up can add some fun twists to this classic recipe!

Tropical Twist

To give your slow cooker barbecue chicken a bright, tropical flavor, try incorporating fresh pineapple chunks and a splash of coconut milk into the mix. This combination not only tenderizes the chicken but infuses it with a sweet, zesty flair that pairs beautifully with savory barbecue sauce.

Smoky BBQ Style

If you’re a fan of deeper flavors, consider using smoked paprika or chipotle powder in your barbecue sauce. These elements introduce a delightful smokiness that elevates the dish, making it perfect for those who crave that barbecue grill essence—even without the actual grilling!

Asian-Inspired Flavor

For an exciting divergence, mix soy sauce, ginger, and sesame oil into your barbecue sauce. This Asian-inspired variation of slow cooker barbecue chicken creates a sweet and savory harmony. Serve it over rice or noodles for a complete meal that transports you straight to takeout heaven.

Spice It Up

If you enjoy some heat, don’t shy away from adding jalapeños or a touch of hot sauce to your slow cooker barbecue chicken. This addition will spice things up nicely, providing a kick that complements the sweetness of the barbecue sauce wonderfully.

Experimenting with these variations not only keeps dinner exciting but also invites your taste buds to explore new flavors while savoring a beloved dish.

Cooking Tips and Notes for Slow Cooker Barbecue Chicken

Creating the perfect slow cooker barbecue chicken isn’t just about throwing ingredients into a pot; it’s about layering flavors and using the right methods. Here are some cooking tips to elevate your dish:

Choose the Right Chicken

Using bone-in, skin-on chicken thighs offers more moisture and flavor compared to breasts. The skin helps to keep the meat juicy as it cooks for hours, absorbing the delicious barbecue sauce.

Perfecting the Sauce

Opt for a high-quality barbecue sauce that suits your taste. If you prefer a tangier flavor, consider adding a splash of apple cider vinegar to the sauce before cooking. It’s an easy tweak that can make a world of difference!

Timing Matters

Cook your slow cooker barbecue chicken on low for approximately six to eight hours to allow the flavors to meld beautifully. If you’re short on time, you can cook it on high for about three to four hours, but the low and slow method is best for tenderness.

Rest the Chicken

Once your chicken is done, let it rest for 10-15 minutes before shredding. This step helps redistribute the juices, resulting in a more succulent texture.

Incorporating Leftovers

Don’t let leftovers go to waste! Shredded barbecue chicken is perfect in sandwiches, on salads, or even in tacos. It’s versatile and can be easily reheated, keeping mealtime exciting!

With these tips in mind, you’ll be well on your way to serving up a delicious, comforting dish of slow cooker barbecue chicken that friends and family will adore. Enjoy!

  • Yield: 4 servings 1x
  • Diet: Low Carb

Description

Delicious slow cooker barbecue chicken served in fresh lettuce wraps with easy guacamole and green onions.

Ingredients

Scale
  • 4 large boneless, skinless chicken breasts
  • 1/2 cup sugar-free ketchup
  • 2 T tomato paste
  • 6 T sweetener of your choice
  • 1/4 cup apple cider vinegar
  • 1/4 cup yellow mustard
  • 2 tsp. green Tabasco sauce (optional)
  • 1 1/2 T Worcestershire sauce
  • 1/2 tsp. Liquid Smoke (optional, but recommended)
  • 2 large heads Iceberg lettuce (or other lettuce of your choice)
  • 2 avocados
  • 1 T fresh-squeezed lime juice
  • 1/2 tsp. chile powder
  • 1/2 tsp. Vege-Sal (or slightly less regular salt)
  • 2 green onions, sliced

Instructions

  1. Trim visible fat and any membranes from chicken breasts, then cut each chicken breast in half lengthwise.
  2. Stir together the low-sugar ketchup, tomato paste, sweetener of your choice, apple cider vinegar, yellow mustard, green Tabasco sauce, Worcestershire sauce, and Liquid Smoke to make the barbecue sauce.
  3. Spray the slow cooker with olive oil or nonstick spray and layer the chicken in a single layer as much as possible.
  4. Pour over the sauce, so all the chicken is covered.
  5. Cook on high for one hour; then turn to low and cook 2 hours more.
  6. When the chicken is done, remove it to a cutting board to cool enough to handle.
  7. Put the sauce in a large frying pan and simmer over medium heat until it’s reduced by half, about 6-8 minutes.
  8. Use two forks to shred the chicken apart.
  9. When the sauce is reduced by half, put the chicken in the frying pan and stir to coat with sauce.
  10. You can heat the chicken in the pan for a few minutes if needed.
  11. To make lettuce wraps, combine the avocado, lime juice, chile powder and Vege-Sal (or salt) to make the Easy Guacamole, and slice the green onions.
  12. Cut out the core of the lettuce with a sharp knife; then peel off two lettuce leaves together to make a “cup” to hold the barbecued chicken.
  13. Fill each lettuce “cup” with desired amount of the chicken mixture, top with guacamole and sliced green onions, and devour!
  14. If this makes more than you’ll eat at one time, refrigerate the chicken and lettuce cups separately, but keep one avocado whole to mash up right before you eat the leftovers.
  15. The Slow Cooker Barbecue Chicken can also be used for chicken sandwiches or Quesadillas.
  16. You could make the lettuce wraps with Slow Cooker Pulled Pork if you prefer.
